UK date format - List created within SharePoint Site

All of my regional settings are set to UK, en-GB, date etc at across the tenant level. I've double check at operator level too. Despite this, when creating a List in a SharePoint site I've created, the date in the date column defaults to US format.
When creating a list directly in Lists however, the UK date format sticks.
